Peri Peri Panini Recipe made with paneer, is a vegetarian version of the popular sandwich. Ingredients
  

1st Making Red Garlic Chutney:

  • 10-12 Piece Whole kashmiri red chillies (soaked & deseeded)
  • 2-3 Piece Green chillies
  • 7-8 Piece Garlic cloves
  • 1 Tbsp Cumin powder
  • 1 Tbsp Black salt
  • Salt to taste
  • Water as required

Making Green Sandwich Chutney

  • 1 Cup Coriander
  • 6-7 Piece Curry leaves
  • 7-8 Piece Spicy green chillies
  • 5-6 Piece Garlic cloves
  • 1 Inch Ginger
  • 2 Tbsp Roasted chana dal
  • Salt to taste
  • 1 Pinch Sandwich masala/chaat masala
  • 1 Pinch Cumin powder
  • 2-3 Piece Ice cubes
  • Water very little

For peri peri spice mix

  • 2 Tbsp Red chilli powder
  • ½ Tbsp Black salt
  • 1 Tbsp Powdered sugar
  • ½ Tbsp Ginger powder
  • 1 Tbsp Garlic powder
  • 1 Tbsp Oregano
  • ¼ Tbsp Cinnamon powder
  • ½ Tbsp Salt

Making Panini mixture

  • 100 Gram Paneer
  • â…“ Cup Capsicum (chopped)
  • 1 Piece Onion medium-sized (chopped)
  • â…“ Cup Cabbage (chopped)
  • â…“ Cup Sweet corn kernels
  • 2-3 Piece Green chillies
  • 2 Tbsp Peri peri spice
  • 3 Tbsp Red garlic chutney
  • 3 Tbsp Mayonnaise
  • Salt to taste
  • 60-70 Gram Processed cheese

Making the panini

  • Panini bread (or regular bread) • Soft butter • Spicy green chutney • Red garlic chutney • Panini mixture

  • First of all, for the sandwich, Let's see how to make Red Garlic Chutney. So here I've deseeded 10-12 whole Kashmiri red chilies & soaked them in hot water for half an hour.
  • Now, I'm adding this in a mixer-grinder, along with it 2-3 green chilies for the spiciness, 7-8 garlic cloves, 1 tsp cumin powder, 1 tsp black salt (kala-namak), salt to taste, & a little bit of water to grind.
  • After adding all these ingredients, you have to grind it in the mixer-grinder into a fine paste & here our Red Garlic chutney is ready.

  • Now let's make homemade Peri-Peri powder. I've taken 2 tbsp Kashmiri red chili powder, 1/2 tsp black salt, 1 tsp powdered sugar, 1/2 tsp dried ginger powder, 1 tsp garlic powder, 1 tsp oregano, 1/4th tsp cinnamon powder & half tsp salt. Take all these ingredients in a jar & shake it well, If you'd like, you can even grind these spices in a mixer- grinder too.
  • All the spices have combined well together & you can see that our home-made Peri-Peri masala is ready.

Making the green chutney

  • Now let's make the Mumbai sandwich style green chutney, 1 cup fresh coriander leaves, 6-7 curry leaves, 7-8 spicy green chilies, 5-6 garlic cloves, 1/2 inch ginge, 2 tbsp roasted chana dal (split Bengal gram), salt to taste, 1 pinch of sandwich masala or chat masala, 1 pinch cumin powder & here I'm adding some ice cubes to retain the color. Just a little bit of water to easily grind the chutney.
  • Now, grind all these things in a mixer-grinder properly. So, as you can see, you have to grind the chutney up to the same texture & it's got a nice bright green color & so our Mumbai-style Sandwich Chutney is ready.
  • Now, these 3 things, you can use in a variety of sandwiches, wraps, hot dogs, etc. It's not just specific to this recipe only. All these 3 things come out really nice. We will be using the Red chutney & Peri-peri masala to make the filling in our next steps, where, with paneer & vegetables, these things will be combined to make a filling & then we will assemble & grill the Panini.

Making filling batter

  • So to make the filling, in a bowl take 100 grams diced paneer, 1/3rd cup chopped capsicum, 1/3rd cup chopped onion, 1/3rd cup chopped cabbage, 1/3rd cup boiled sweet corn, 2-3 chopped green chillies, 2 tbsp our home-made Peri-Peri masala that we made earlier along with it, 3 tbsp Red Garlic chutney that we made, is added, 3 tbsp mayonnaise, salt to taste & I'm grating 60-75 grams processed cheese here to add chilies.
  • After adding all these ingredients to the bowl, you have to mix them gently. Be careful not to crumble the paneer pieces, With light hands but thoroughly mix the mixture well. As you can see the mixture has come together now & our Peri-Peri Panini filling is ready...

For assemble the peri peri panini

  • So, now to assemble the Panini, I'm using the Panini bread, which is used to make Mumbai street-style Panini. You can even use basic sandwich bread as well.
  • Now, you have to slice the bread from the center into two slices. So, slice & divide the bread into two halves.
  • Now, we have to butter the bread. Now spread soft butter generously on both slices of bread.
  • After applying the butter, on one slice apply green chutney, our Mumbai-style sandwich chutney, that you have to spread nicely.
  • And on the second slice, I'm applying the Red garlic chutney that we prepared earlier
  • Now, the Peri-Peri paneer filling that we had made, that I'm spreading on the sandwich, apply a nice sufficient amount of filling on the sandwich & spread it evenly.
  • Now, cover it with the other slice of bread to make a sandwich. Now, our sandwich is ready to grill. Now, before grilling apply some more butter even on the outside, to help our bread toast nicely.
  • To grill the Panini, I'm using a grill pan. You can use a normal pan too, It will give the same results, except for the grill marks.
  • Now, place the Panini, buttered side down on the pan, you have to apply some pressure from the top. This is a very important step.
  • You can take any type of spatula & continue to press it constantly for minimum 1-1.5 minutes. By doing so your panini will take a nice shape & the grill marks & the texture of the bread will be quite crunchy & crispy from outside.
  • After that, you have to flip it. After flipping it, continue to grill it. You can either apply some pressure or just let it grill as it is, just for 1-1.5 minutes, or until the bread on the bottom is nicely grilled too & the panini is heated through, till then you have to continue cooking the Panini.
  • So, I've cooked/ grilled the panini properly & now our Panini is ready to serve...
