The spicy and flavorful Malvani Chicken Recipe comes from the Malvan area of coastal Maharashtra. A spicy, fragrant handmade Malvani masala and a lot of coconut are used to make an authentic Malvani chicken curry. For all you spice connoisseurs out there, the ideal chicken curry.

What Does Malvani-Style Mean?

On the western coast of India, the term “Malvani” refers to the inhabitants of Maharashtra. Malvani-style food is renowned for celebrating coconut and fish because the region is home to vast coconut farms and fishing communities. Additionally, they have a few distinctive masala mixes that serve as the foundation for the majority of their vegetarian and meat-based dishes.

Malvani Masala prepared at home

Indian spices that are fragrant and warming make up malvani masala. I prepare my own original Malvani masala at home with the help of my Konkani pals. The malvani masala I purchased at a retailer does not satisfy me. Although the list of ingredients may appear overwhelming and infinite, I promise that the finished product will blow your mind and palate.

spices such as green cardamoms, black cardamoms, star anise, cinnamon, cumin, caraway, sesame seeds, and fennel seeds. The Malvani masala is made with mace, nutmeg, a dash of hing, desiccated coconut, and a tonne of dried red chilies. These spices are all roasted together and then powdered. Imagine how flavorful this masala is. To understand it, you must create it.

What are the ingredients needed to make Malvani Chicken Recipe?

Making Malvani Chicken Recipe Hirva Vaatan

  • A HANDFUL OF FRESH CORIANDER
  • 4-5 Piece GREEN CHILLI
  • 2 Inch GINGER
  • 15 Piece GARLIC CLOVES
  • WATER (AS REQUIRED)

For Chicken Marination

  • 2 Kg CHICKEN (DESI)
  • SALT (TO TASTE)
  • ¼ Tbsp TURMERIC POWDER
  • 3 Tbsp MALVANI MASALA
  • Hirva Vaatan
  • 1 Tbsp LEMON JUICE

Making Wet Vaatan

  • 2 Tbsp OIL
  • 3 Piece ONION (SLICED)
  • 1 Tbsp CORIANDER SEEDS
  • 1 Tbsp BLACK PEPPERCORNS
  • 4-5 Piece CLOVES
  • 2 Inch CINNAMON
  • 12-15 Piece GARLIC CLOVES
  • 2 Inch GINGER
  • 1.5 Piece COCONUT
  • WATER (AS REQUIRED)

For Making Malvani Chicken Curry

  • 5-6 Tbsp OIL
  • 2 Piece ONION (CHOPPED)
  • 2 Tbsp KASHMIRI RED CHILLI POWDER
  • 4-5 Tbsp MALVANI MASALA
  • HOT WATER (AS REQUIRED)
  • SALT (TO TATSE)
  • A LARGE HANDFUL FRESH CORIANDER

For Making Malvani Chicken Curry

  • 5-6 Tbsp OIL
  • 2 Piece ONION (CHOPPED)
  • 2 Tbsp KASHMIRI RED CHILLI POWDER
  • 4-5 Tbsp MALVANI MASALA
  • HOT WATER (AS REQUIRED)
  • SALT (TO TATSE)
  • A LARGE HANDFUL FRESH CORIANDER

Instructions
 

  • Add the fresh coriander, green chili, ginger, garlic & water into a mixer grinder jar & grind into a fine paste, make sure you add very little water. Your green vaatan is ready.
  • Add the chicken into a large bowl, I’m using desi chicken today you can use broiler chicken too.
  • Further, add all the ingredients of the marinade & mix it well with the chicken, and set it aside to marinate. Since we are making village-style chicken, so if you use desi chicken, it'll give much better flavors. The taste is amazing & the gravy gets a lot more flavourful. So, try if you get desi chicken, try using that for this recipe.
  • To make the wet vaatan set a kadhai over a high flame.
  • Add oil, once the oil gets hot add the onions & cook them over high flame briefly & then add coriander seeds, black peppercorns, cloves & cinnamon, stir & cook until the onions turn translucent.
  • Once the oil gets hot add the onions & cook them over high flame briefly.
  • Once the onions turn translucent, add garlic, ginger & coconut, stir well & cook until the coconuts turns slightly golden brown.
  • Then transfer the onion & coconut into a bowl & cool them down completely.
  • Then transfer it into a mixer grinder jar & grind it into a fine paste using very little water, your wet vaatan is ready.
  • Now, the next step is to cook the chicken. I’m cooking the chicken curry over a chulha today, you can follow the same steps & cook the curry over a stove.
  • Set the handi over the flame & add the oil. Now, the cooking vessel also has to be prepped. We have to apply some wet mud on the vessel. Red-colored mud is used commonly. This is done to make it easy to clean the vessel afterward. All the soot collected can be washed off easily.
  • Once the oil heats up, add in the onions & cook them until they turn light golden brown.
  • Once the onions turn light golden brown, add kashmiri red chilli powder, malvani masala & a splash of hot water, stir & cook the spices for 2-3 minutes (make sure you lower the flame before adding the spices).
  • Further add the wet vaatan you prepared earlier & stir well, cook the vaatan while stirring frequently until the oil separates, if the masala becomes too dry while cooking it then add hot water as required & continue to cook the masala.
  • Once you have cooked the masala, add in the marinated chicken along with salt to taste, stir well & cook the chicken over high flame then add hot water & stir well.
  • Further partially cover the vessel with a lid & cook until the chicken is done.  covering the lid this way, leaving a little gap so that the oil stays separated, If the lid is completely covered, then the oil keeps mixing with the curry and does not separate.
  • Since I have used desi chicken, it will take about 45 minutes to an hour to cook fully, if you are using broiler chicken then it should cook in about 20-25 minutes.
  • Remove the lid after long intervals & stir the chicken, is you want the curry to be thickn then add less water initially & if you want it to be thinner then add more water.
  • Once the chicken is cooked & the oil comes floating on the top, taste & adjust the seasoning accordingly then add freshly chopped coriander & stir well.
  • Our malvani chicken Recipe is ready, serve it hot with bhakris & rice.

Notes

Take a small piece of chicken and place it on a dish. Check to see whether the flesh can be sliced with a spoon easily. The meat should also seem white and not reddish.
