Making Homemade Breaded Chicken Burgers Step Step
1. In a mixer-grinder jar, take 2 tbsp Kashmiri red chili powder, 1 tsp spicy red chilli powder, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp dried mango powder, 1/2 tsp black pepper powder, 1 tsp oregano, 1 tsp sugar, & add 1 tsp salt. chili.
2. To make the Burger Spread, take 1/2 cup mayo in a bowl, 4 tbsp ketchup, 1 tbsp mustard sauce, 1 tsp honey, 2 tbsp red chili sauce, & add a pinch of black pepper powder & mix well. Once all your ingredients are mixed, then your Burger sauce is ready.
3. To make the crispy chicken, I’ve taken 6-7 boneless chicken thighs, Now we have to dock the chicken thighs. Docking means, using the tip of the knife to poke into the chicken flesh to make tiny holes. By doing so the marinade will seep into the chicken & your chicken will also be really tender.
4. Once you have done this process, then transfer these chicken thighs into a bowl. Now, on it add salt to taste, a pinch of black pepper powder, 1/2 tsp red chilli powder, 1 tsp lemon juice, & add 1 tbsp ginger-garlic-chili paste.Â
5. Now, mix everything well & massage the chicken. so that the marinade coats the chicken very well. Once you have mixed & massaged the chicken well, then you have to marinate it for 1/2 hour. Once your chicken is marinated, now we have to crumb it.
6. To crumb the chicken, take plenty of refined flour in a big bowl. I’ve taken about 3-4 cups of it. then season it with salt, & add a pinch of black pepper powder & mix well. Now take a chicken piece & coat it with refined flour like this. Once coated, nicely massage the chicken into the refined flour. Doing so will create some crevices & some texture on the chicken. Once you have done this for 30-40 seconds, then lift the chicken & shake it lightly to dust off the excess flour.
7. After that keep ice-cold water ready & dip this chicken in ice-cold water. Dip it & let it be for 5-10 seconds, Then remove the chicken, let some water drip off & then again coat it with the refined flour.
8. Again add lots of refined flour & continue to massage it within the chicken for about 1 minute. By doing so, even more, flour will stick to the chicken pieces due to cold water & form nice small sticky pieces. or basically, crumbs will form. & these crumbs when fried turn super crispy.
9. Again remove the chicken & shake it like this. If you don’t shake it then you won’t see the crumbs. After shaking, you can see these crumbs on top, these will become nice & crispy on frying. & it will give amazing results. Once you have crumbed the chicken like this, then we have to fry it.
10. To fry your oil should be at 170 degree Celsius or moderately hot. To add chicken to the oil, hold the chicken in hot oil first & then slowly release it in the oil. You can fry 2-3 thighs at once in a pan. Here, I’ve added 2 chicken thighs in hot oil.
11. Now, you have to fry them on a medium-high flame while turning in between until they are golden brown & crispy It will take about 6-7 minutes for the chicken to cook. After 6-7 minutes, you can see that the crumbs on the chicken have become golden brown, & the chicken is cooked well from the inside. Remove the chicken & let the excess oil drip off. & then place it on a sieve to let the excess oil drip off. While your chicken is still hot add lots of Peri-Peri seasoning to it. Coat the chicken nicely with Peri-Peri seasoning from both sides. & our Crispy Peri-Peri Chicken is ready.
12. Now, the next & final step is to toast the Burger Buns & then we will assemble our Burgers. Take your Homemade Burger Buns & slice them in the center like this. After that heat up a pan nicely. Once your pan is hot, add butter to it. Then toast the burger buns in butter.
13. You can keep checking in between. Once toasted well remove them. You can see that our Burger Buns are nicely toasted.
14. Now finally assemble the chicken burger and serve it.
