After stirring cook it well for 1-2 minutes on high flame. After that add some hot water to it & stir well.

Now, using a sieve, strain the makhani sauce & add to this. This process of straining will give the makhani sauce it’s a velvety smooth texture. Once you’ve added the strained gravy, cook it while stirring for 3-4 minutes.

After 3-4 minutes, add 1 tbsp honey to it, 2-3 tbsp fresh cream, a pinch of roasted Kasuri methi powder, a pinch of garam masala, & add some freshly chopped coriander & stir very well. Taste the Makhani sauce & adjust the salt.

Once the flour is combined, then transfer it to a kitchen platform, Knead it nicely for 8-10 minutes, until your dough is completely smooth. After 8-10 minutes, you can see that our dough has become really smooth, Make a ball out of it & place it in a bowl & cover it with a moist cloth, & let it rest for about 15 minutes.

Let’s make the filling for the momos by then. In a bowl add 500 grams of minced chicken, Add 1 chopped onion, lots of spring onion greens, & lots of freshly chopped coriander leaves, 3 green chillies, chopped, 1 tbsp ginger, 2 tbsp chopped garlic, 1 tsp lemon juice, salt to taste, a pinch of black salt, 1/2 tsp dry mango powder, a pinch of chaat masala, 1 tbsp Kashmiri red chili powder, 1 tsp coriander powder, 1/4th tsp garam masala, 1/4th tsp turmeric powder, a pinch of black pepper powder, 1 tbsp ghee, & I’ve added 100 ml water here. Mix all these ingredients nicely.

Fold & pinch, fold & pinch & keep going forward Until you get a shape like this. Now again press all the edges nicely again to make sure your momos are properly sealed. & it has a uniform shape. You can see, this is how your momos should be cooked from one side. At this stage, you have to add about 50 ml of water to it. Add water & instantly cover the lid. After covering the lid, cook these momos on medium-low flame for 6 minutes on the clock. The steam created within will cook the momos from the top, The bottom layer will be crispy & your perfect Panfried momos will be cooked. with chicken tikka flavor.
