Making Makhani Sauce:

- KASHMIRI RED CHILI 2-3 NOS.
- GREEN CARDAMOM 3 NOS.
- TURMERIC POWDER 1/4 TSP
- KASHMIRI RED CHILLI POWDER 1 TSP
- CORIANDER POWDER 1/2 TSP
- SALT TO TASTE
- HOT WATER AS REQUIRED
- WATER AS REQUIRED
Final cooking:
- BUTTER 2-3 TBSP
- GINGER 1 TSP (CHOPPED)

For Making Momos Dough
- REFINED FLOUR 2 CUPS
- SALT TO TASTE
- WATER AS REQUIRED (ADD GRADUALLY)
Making Makhani Sauce
- CHICKEN 500 GRAMS (MINCED)
- ONION 1 NO. (CHOPPED)
- SPRING ONION GREENS A LARGE HANDFUL (CHOPPED)
- FRESH CORIANDER A BIG HANDFUL (CHOPPED)
- GREEN CHILLI 3 NOS.
- GINGER 1 TBSP (CHOPPED)
- GARLIC 2 TBSP (CHOPPED)
- LEMON JUICE 1 TSP
- SALT TO TASTE
- BLACK SALT A PINCH
- DRY MANGO POWDER 1/2 TSP
- CHAAT MASALA A PINCH
- KASHMIRI RED CHILLI POWDER 1 TBSP
- CORIANDER POWDER 1 TSP
- GARAM MASALA 1/4 TSP
- TURMERIC POWDER 1/4 TSP
- BLACK PEPPER POWDER IN A PINCH
- GHEE 1 TBSP
- WATER 100 ML
How Butter Chicken Momos is made?
1. First of all, let’s see how to make a Makhani Sauce. In a vessel take 2 tbsp oil, & add 1 tbsp butter & let it melt.
2. Now, to this add 1 tsp cumin seeds, & add 2 medium-sized sliced onions & sauté the onions for 2-3 minutes.
3. Now to this add 6-8 tomatoes, 7-8 cloves of garlic, 1-inch ginger, 2-3 green chillies, 1 tbsp coriander stems, 7-8 cashews, 2-3 dried Kashmiri red chillies, 3 green cardamoms, 1/4th tsp turmeric powder, 1 tsp Kashmiri red chilli powder, 1/2 tsp coriander powder, & add salt to taste & stir everything together nicely.
4. After stirring cook it well for 1-2 minutes on high flame. After that add some hot water to it & stir well.
5. Now cover it & let all these things cook for about 15 minutes covered. After 15 minutes, you can see that everything is cooked & the tomatoes are nice & soft. Turn the stove off & let everything cool down nicely.
6. Once the mixture is cooled down, then add it to a mixer grinding jar, Add some water & blend it to a fine paste. You can see that we have blended our Makhani sauce.
7. Now we have to temper it. In a saucepan add 2-3 tbsp butter, & 1 tsp ginger, & add 1 tsp garlic, Sauté it for 1-2 minutes.
8. Now, lower the flame & add 1/4 tsp Kashmiri red chilli powder, Stir it nicely.
9. Now, using a sieve, strain the makhani sauce & add to this. This process of straining will give the makhani sauce it’s a velvety smooth texture. Once you’ve added the strained gravy, cook it while stirring for 3-4 minutes.
10. After 3-4 minutes, add 1 tbsp honey to it, 2-3 tbsp fresh cream, a pinch of roasted Kasuri methi powder, a pinch of garam masala, & add some freshly chopped coriander & stir very well. Taste the Makhani sauce & adjust the salt.
11. You can see that our beautiful butter chicken gravy is ready.
12. To make the dough for momos, in a big bowl take 1 cup of refined flour, Add a pinch of salt & now to this gradually add water. Add enough water to give you a semi-stiff dough. Slowly add water & combine the water with the flour,
13. Once the flour is combined, then transfer it to a kitchen platform, Knead it nicely for 8-10 minutes, until your dough is completely smooth. After 8-10 minutes, you can see that our dough has become really smooth, Make a ball out of it & place it in a bowl & cover it with a moist cloth, & let it rest for about 15 minutes.
14. Let’s make the filling for the momos by then. In a bowl add 500 grams of minced chicken, Add 1 chopped onion, lots of spring onion greens, & lots of freshly chopped coriander leaves, 3 green chillies, chopped, 1 tbsp ginger, 2 tbsp chopped garlic, 1 tsp lemon juice, salt to taste, a pinch of black salt, 1/2 tsp dry mango powder, a pinch of chaat masala, 1 tbsp Kashmiri red chili powder, 1 tsp coriander powder, 1/4th tsp garam masala, 1/4th tsp turmeric powder, a pinch of black pepper powder, 1 tbsp ghee, & I’ve added 100 ml water here. Mix all these ingredients nicely.
15. Adding ghee & water will make the filling for your momos moist & juicy. Once everything is mixed together, you can see that our filling for momos is ready.
16. Our dough is well rested too now. Take out a large portion, Coat this dough ball with dry flour.
17. Now place it on a rolling disc or a platform & roll it out using a rolling pin into a thin chapati. You can see how I’ve rolled it out. Its thickness should be slightly thinner than our regular chapati.
18. Now, using a round cutter cut roundels like this. Your momos wrapper should be about 4 inches in diameter.
19. Now, add the chicken filling in its center. You have to fold it to make it into a taco shape. Now, here at one corner, you have to pinch it like this to seal it. Once you’ve pinched the corner, then using the other finger make a fold & then pinch it again.
20. Once you’ve pinched the corner, then using the other finger make a fold & then pinch it again. Repeat the same process. Fold & pinch, fold & pinch & keep going forward Until you get a shape like this. Now again press all the edges nicely again to make sure your momos are properly sealed. & it has a uniform shape. 21. Now, we have to cook the momos, by panfrying. Let’s see how to do that. Heat a pan very nicely. Now add 1-2 tbsp oil to it. & add 1 tbsp butter to it.
22. Once the butter melts, then place the momos in the pan, After placing the momos in, cook them until the undersurface of the momos turns light golden brown in color. It may take about 1-1.5 minutes.
23. You can see, this is how your momos should be cooked from one side. At this stage, you have to add about 50 ml of water to it. Add water & instantly cover the lid. After covering the lid, cook these momos on medium-low flame for 6 minutes on the clock. The steam created within will cook the momos from the top, The bottom layer will be crispy & your perfect Panfried momos will be cooked. with chicken tikka flavor.
24. Momos are ready. Gravy is ready. Let’s plate our Butter Chicken Momos.
Butter Chicken Momos Healthy or not?
