Heat ghee in a pan. Add cumin, coriander, fenugreek, fennel, black pepper, cinnamon & dry red chili. Saute until aromatic. Also, add ginger-garlic paste and cook.

Add tamarind paste to the whole spices & grind. Keep aside to use later.

Take another pan & heat ghee again. Add chopped onions & curry leaves. Saute until onions are soft.

Thereafter add turmeric powder, salt & jaggery. Melt jaggery.

Now add the whole spice paste & saute until ghee separates.

Add water to adjust the consistency of the gravy.
