Chili Paneer Recipe

One well-known Indo-Chinese cuisine is chili paneer recipe. The chilli paneer dish is pretty basic and uncomplicated, even for novices. Before being fried to crispness, paneer is first covered in a cornflour batter. Then, a fresh chilli sauce is made by sautéing components including garlic, capsicum, and spring onions. Soy sauce, vinegar, and red chilli sauce are then combined to create the sauce. Serve with noodles or rice.

This dry meal is delicious as an appetiser as well. A gravy version of it will be shared shortly. You may also look at my other paneer recipes. Therefore, give it a try and let me know how it works out for you.

For Making Chili Paneer Recipe Step by Step

  • First of all, for the 'Chili Paneer Recipe', we have to coat & fry the paneer. Let's see how it's done. I'm taking 250 grams of paneer in a big bowl. I've cut the paneer like this in a diamond shape. You can cut it into cubes too.
  • Now add salt to taste on the paneer, and a pinch of black pepper powder & I'm adding 2 tbsp corn flour here.
  • After adding cornflour, just toss the bowl to coat the paneer pieces with cornflour. Don't use your hands to mix otherwise the cornflour doesn't coat the paneer very well. Once you coat the paneer like this, then just sprinkle some water. After a splash of water, again sprinkle 1 more tbsp of cornflour. After sprinkling the cornflour, you have to coat it again with the same process.
  • You can see that the paneer is nicely coated. You have to just coat the paneer this much before frying.
  • I've heated the oil to fry the paneer. The oil is at 170 degrees Celsius, meaning the oil is nice & hot.
  • Now carefully add cubes of paneer in the oil 1 by 1. Your flame should be high otherwise your paneer will become hard & not fry properly. You have to fry the paneer at a high flame itself. Your paneer will be fried in a minute or so. Fry the paneer until it's light golden brown.
  • Once your paneer is fried, take it out with a strainer,& transfer it to a sieve & let the excess oil drip off. So, our paneer is fried. Fry the paneer similarly, whenever you want to make an Indo-Chinese recipe using paneer.
  • Now, the next step is that we have to make a sauce. It gets ready within no time. We'll make the sauce for 'Chilli Paneer', & then toss the paneer in it. Let's see how to do that process. Heat a wok really nicely.
  • Once your wok is nicely hot, then add 1 tbsp oil to it. Once the oil is hot, then to it add 2 tbsp chopped onion, 4 tbsp chopped garlic & add 1 tbsp chopped ginger & then for 1-2 minutes on high flame, cook while stirring.
  • Once you've nicely sautéed the garlic & ginger. Then add 200 ml hot water or vegetable stock & stir nicely. Now, to this add 2 tsp dark soy sauce, 1 tbsp light soy sauce, Paste of 1 spicy green chili, 1 tbsp coriander stems, 2-3 slit green chilies, salt to taste, 1 pinch white pepper powder & add 1 tsp vinegar & stir properly. Be careful, not to add too much salt, as soy sauce adds a lot of saltiness already. So add slightly less amount of salt.
  • Now, in another bowl mix 1 tbsp cornflour & some water, to make a corn-starch slurry. We have to slowly thicken the sauce with this slurry. So gradually add the slurry into the sauce, & cook the sauce on the high flame while stirring until your sauce thickens a little bit.
  • Now our sauce has thickened. Now, add a pinch of salt to this, & add our fried paneer, along with it some roughly chopped fresh coriander leaves, some chopped spring onion, add half an onion cut into petals like this, one diced capsicum, & add 2 tbsp bulbs of spring onions.
  • You have to toss everything together. Don't cook for long.
  • Just for 1 minute cook it while tossing it on high flame, & in the end, add some spring onion greens on top, & your 'Paneer Chili Recipe' is ready.

Notes

  • Give the gravy some time to rest; turn off the heat if necessary. Add a little water if it gets too thick, then reheat it before serving.
  • The excess maida cornflour paste may be used to make gravy if you don't end up using it all.
  • Just sauté the onion and diced capsicum for a few seconds to keep them crispy for eating.
  • You may use only green capsicum or use colored capsicum to add color.
  • The paneer cubes can be deep-fried or toasted in a dosa pan.
  • Even vegetable stock can be substituted with water. The water level should be adjusted based on consistency.
  • The use of freshly ground pepper gives the food a wonderful taste.
  • As one of the essential ingredients in Chilli Paneer, spring onions should not be missed.
